Blueberry Bomb Muffin Bars

Ingredients

1 cup whole grain or multi grain pancake/baking mix
1/2 cup oat flour
1/2 cup sweetener of choice
1& 1/2 cups blueberries divided (fresh or frozen)
1/2 cup plain nonfat yogurt
2 tsp coconut oil
1/2 cup unsweetened apple sauce
1 tsp pure vanilla extract
grated zest and juice of 1 lemon
2 tbsp instant oats
pinch of salt

Directions
  1. Preheat oven to 350 F.
  2. Spray a square baking dish with cooking spray.
  3. In a mixing bowl, combine pancake mix, oat flour, sweetener and salt.
  4. In a blender, throughly blend 1 cup of blueberries, yogurt, oil, applesauce, vanilla extract, lemon juice and zest.
  5. Combine blended mixture with dry ingredients to create batter.
  6. Pour batter into baking dish and sprinkle 2 tbsp of instant oats and remaining 1/2 cup of blueberries on top of batter.
  7. Spray the top with a light misting of coconut spray.
  8. Allow to bake for 35-40 minutes or until light golden brown around the edges and a toothpick inserted in the middle comes out clean.
  9. Allow to cool completely and set before cutting into 12 squares.
