INGREDIENTS
4 eggs
3 small red potatoes
fresh parsley
crushed red pepper
PROCEDURE
Preheat the oven to 425 degrees F.
Peel and grate potatoes
Grease a cupcake pan & place the grated potatoes into the cups
Bake for 15 mins
Crack 1 egg into each bowl & sprinkle with parsley, pepper and salt
Bake for another 15 minutes
