Caramel Apple Truffle

INGREDIENTS

1/2 cup oats (can also use almond meal)
1/2 med. Fuji apple
1 Tbsp coconut flour
1/4 cup date paste
1/4 cup coconut butter
1 Tbsp coconut oil

INSTRUCTIONS
  1. Grind oats in a bullet blender until it becomes a flour. Add 1/2 apple (chopped) and blend with flour until it becomes a sticky paste.
  2. With a spoon, mix in coconut flour to thicken and create less of a sticky batter.
  3. Divide date paste into 5 sections and roll into balls.
  4. Cover date balls (AKA: your caramel) with batter and roll around in hands (washing hands in between each time you roll with help with the stickiness).
  5. Place on wax paper and freeze while preparing the sauce.
  6. Melt coconut butter and oil together to create a sauce.
  7. Dip chilled caramel apple balls in sauce and place back on wax paper. Do this 2-3 times to create a thicker coating. Store in fridge until ready to consume!
