Chai Jam

Ingredients
4 cups diced watermelon (try other fruits as well)
2 tsp lemon juice
2 Tbsp chia seeds

Procedure
  1. Add diced watermelon to large pot over medium heat.
  2. Allow fruit to soften, and mash with a potato masher to assist break-up of diced fruit. Add lemon juice. Stir often to avoid burning on the bottom.
  3. After about 15 minutes, use an immersion blender (or transfer to processor in batches) to break up watermelon chunks. (It's fine to leave some chunks if you like chunky jam!)
  4. Add chia seeds to mixture, turning heat to low. Allow to simmer for about 30 minutes, stirring every so often.
  5. Once removing from heat, allow to cool before jarring. This mixture will continue to thicken as it sits and in the fridge.
  6. Enjoy!

Mixed Berry Jam

Ingredients

24 ounces (2 12 oz bags) of frozen mixed fruit, thawed
½ cup sweetener (optional—I used powdered stevia)
1 tablespoon lemon juice

Procedure
  1. Mix all ingredients in a pot over medium heat on the stove. Stir often, for around 30 minutes. It will thicken over time.
  2. About 10 minutes into it, once the fruit has softened completely, mash with potato masher or fork and add lemon juice. Allow to continue to cook.
  3. Once thick, remove from heat and allow to cool before transferring to jar.
