Ingredients
2 cups chopped strawberries 1 1/2 cups flour of choice 1/2 cup dark unsweetened cocoa powder 2 eggs 1 teaspoons vanilla 1/4 cup coconut oil, melted and cooled slightly 1 1/2 cups LIGHT coconut milk 1/2 cup milk (or unsweetened almond or coconut milk) 1/2 cup unsweetened shredded coconut 1 Double Chocolate Chunk Quest bar cut into pieces Frosted Glaze 1 scoop cinnamon why protein 1/2 cup plain Greek yogurt 1T sugar free maple syrup 1T Stevia Splash of unsweetened almond or coconut milk Instructions To make the waffles, in a large bowl, whisk together the flour, 2 tsp baking powder, cocoa powder, 1/2 cup sugar or sub sweetener of choice and 1/4 tsp salt. Set Aside. In a medium-sized bowl, whisk together the eggs and vanilla. Add the coconut oil and the milks. Pour the wet ingredients into the dry ingredients, and mix together. Add the shredded coconut and chocolate chips and mix in. Cook according to your waffle makers instructions. Top your waffles with your strawberries and glaze, and sprinkle with some extra coconut! |
