Chunky Monkey Cheesecake

INGREDIENTS
  • 2 (250g) containers of cream cheese – I used 95% FF
  • 3/4 cup 0% greek yoghurt
  • 1/2 cup egg whites
  • 1/2 cup splenda (or substitute a sweetener)
  • 2 large, ripe bananas
  • 1 scoop (about 1/4 cup) chocolate whey protein (or banana or vanilla)
  • 1/4 cup sugar-free chocolate chips
  • 1/4 cup walnut pieces

PROCEDURE​
  1. Let the cream cheese, greek yoghurt, and egg whites sit out until room temperature.
  2. Grease a 9″ spring form pan and pre heat oven to 350 F (around 175 C).
  3. In a large bowl beat together the cream cheese and yoghurt until creamed; then beat in sweetener, whey, and egg whites
  4. Mash one banana and stir it in, then fold in the chocolate chips and walnuts.
  5. Pour into the spring form pan, and slice the second banana into slices, pushing them into the top near the outer edges
  6. Put the pan into the oven and wait about 40-48 minutes depending on your oven, edges will brown
