Crustless Quiche

Ingredients

2 eggs
1 ¼ cup egg whites/substitute
2 cups spinach
1 cup mushrooms
1 cup broccoli
½ cup onion
2 tsp Dijon mustard
1/3 cup cashew milk
½ tsp garlic powder
½ tsp salt
¼ tsp pep
1 oz goat cheese

Procedure
  1. Saute vegetables until tender.
  2. Blend up eggs, egg whites, Dijon, milk, and seasonings until smooth.
  3. Combine veggies & egg mixture in a quiche dish.
  4. Top with goat cheese.
  5. Bake at 350°F for 30 minutes. Allow to cool for 20 minutes before slicing.
