Eggs in a Sweet Nest

Ingredients
1 sweet potato shredded 1 small purple onion, thinly chopped 12 heaping spoonfuls of salsa 12 eggs salt/ pepper to taste Instructions Grease muffin tin. Add shredded potatoes and onion to each cup. Add heaping spoonful of salsa to each cup. Crack an egg into each cup Bake at 350 for 15-20 mins Makes 12 nests |
