Frittata Fingers

Ingredients

1/2 cup egg whites
1 egg
1/2 cup finely chopped zucchini
1/2 cup finely chopped carrot
1/2 cup chopped spinach
1/2 cup finely chopped onion
1/4 cup low fat cheddar cheese
2 tsp parsley
2 tsp oat flour
2 tsp garlic
1/4 tsp salt & pep

Procedure
  1. Preheat oven to 350F.
  2. Combine all ingredients in a bowl.
  3. Transfer to a regular sized loaf pan sprayed with cooking spray.
  4. Top with a little extra low fat cheese (if desired).
  5. Bake 12-15 minutes, until cooked through and beginning to brown on top.
  6. Cool 15-20 minutes before cutting into “fingers.”
  7. Enjoy hot or cold!
