Mexican Lasagna

Ingredients

1 package Morning Star ground Beef
Taco seasoning of choice (I use homemade, found in my Meal Prep eBook)
1 Can black beans
1 4 oz can diced green chiles
1 cups salsa
1 10 oz can green or red enchilada sauce
5 tortillas (I use OLE brand)
1 cup Greek yogurt
1-2 cups spinach
¾ cup low fat shredded sharp cheddar or Mexican blend cheese

Procedure
  1. Sauté ground beef in a little cooking spray and add in taco seasoning. Once beef is cooked, add green chiles, black beans and salsa. Set aside
  2. Pour half of enchilada sauce into a large baking dish, and swirl it around to cover the bottom completely.
  3. Place one whole and one half tortilla down flat into the baking dish.
  4. Spread a layer of Greek yogurt onto your tortillas.
  5. Add a layer of spinach across the tortillas, covering completely.
  6. Layer on half of the ground beef mixture.
  7. Repeat layers: another tortilla layer, greek yogurt, spinach, and the rest of your meat.
  8. Place two final tortillas on top, as well as the rest of your enchilada sauce, and some cheddar cheese.
  9. Bake in an oven preheated to 375°F for 20-25 minutes.
  10. Allow to cool for 20 minutes before slicing and devouring!
