Spicy Mac n Cheese

Ingredients

8 Ounces elbow pasta
1 Cup unsweetened almond milk
2/3 Cup low fat cheese
1 Cup fat free cottage cheese
1 Teaspoon minced garlic
2 Tablespoons Sriracha (Or hotsauce of choice)
Salt and pepper to taste
Crushed red pepper (Optional)

Procedure
  1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente, according to package directions. Drain, return to pan.
  2. Turn heat to medium- stir in cottage cheese and almond milk. Cook approximately 2-3 minutes. 
  3. Stir in cheese and mix until melted.
  4. Add in remaining ingredients
  5. Serve and eat
