INGREDIENTS
1/4 cup chopped onion 2 tsp garlic 2/3 cup greek yogurt 1 14oz can (or 12oz jar) of artichokes in water, drained and chopped 1 bag fresh spinach, chopped (can use frozen if you prefer) 8oz (1 package) low fat cream cheese or Neufchatel cheese 1/3 cup low fat mozzarella 1/4 tsp garlic powder 1/4 tsp salt & pep (to taste) 2 Tbsp freshly grated parmesan PROCEDURE Preheat oven to 350F. Lightly sauté onions, spinach and garlicin a skillet using cooking spray (or olive oil if you prefer, but fat will be higher in nutrition facts) until spinach is wilted and onions are transparent. Mix all ingredients in a bowl (except parmesan) until well combined. Transfer to baking dish (I used a pie plate!). Sprinkle parmesan cheese on top.
