Sweet Potato Casserole

Ingredients

Filling
4 Sweet potatos
3 Tablespoons butter
1-2 Teaspoons of cinnamon
1/2 Teaspoon nutmeg
1/4 Teaspoon pepper
1 Teaspoon salt
1/4 cup egg whites
Stevia to taste

Topping
1 1/2 Cups pecan pieces
1/4 Cup Stevia
1 Teaspoon cinnamon
Pinch of salt
2 Tablespoons butter


Directions
  1. Peel sweet potatoes. Cook in microwave on potato setting.
  2. Crush pecans into smaller pieces. Mix the topping ingredients in a bowl and set aside.
  3. Allow sweet potatoes to cool for 5-10 minutes, With a blender, mix the filling ingredients, except the egg. Add sweetener to your taste, then mix in eggs.
  4. Add sweet potato mix into a greased dish. Sprinkle pecan topping over the top. Bake at 375 until topping is browned (apx 30-45 minutes)
